Tomato soup

Here's a simple and delicious tomato soup recipe:

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (14 ounces each) crushed tomatoes
  • 2 cups vegetable or chicken broth
  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and pepper to taste
  • Fresh basil leaves (optional, for garnish)
  • Cream or milk (optional, for creaminess)

Instructions:

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Add minced garlic and cook for another minute.

  2. Add Tomatoes: Stir in the crushed tomatoes and broth. If you’re using sugar, add it now.

  3. Simmer: Bring the mixture to a simmer. Let it cook for about 20-30 minutes, allowing the flavors to meld.

  4. Blend: If you prefer a smooth soup, use an immersion blender to puree the soup until smooth. If you don’t have one, carefully transfer it to a blender in batches.

  5. Season: Taste and adjust seasoning with salt and pepper. If you want a creamier texture, stir in some cream or milk at this point.
